Walnut and Almonds Cakes

M'chekel or M'chekla with walnuts and almonds that is what I present to you today and what I had prepared for Eid. You can prepare them with a different stuffing (hazelnuts), or pinching and cutting them in different shapes.

Ingredients


3 measures of flour
1 measure of butter
A pinch of salt
Mix of water with orange flower water


Stuffing:
1 measure of walnut
1 measure of non-blanched almonds
1 measure sugar
Egg whites

Honey


Method:


Mix flour with salt, make a hole and add the melted butter. Mix
Add the mixture of water and orange flower water little by little until the dough is smooth and soft.
Divide dough in two and set aside.
Prepare the filling: Mix almonds, ground walnut and sugar, add egg whites one by one until a soft but not too firm dough forms.
Roll out the 1st dough thinly on a floured surface.
Spread  a layer of stuffing.
Cover the stuffing with the 2nd dough.
Cut out circles with a cookies cutter.
Prick the centre with half walnut
Decorate the entire surface of the cake with a crimper.
Let to rest  a bit before baking.
Bake in a moderate oven.

Dip in Honey

This is my favourite Algerian cake I think!!! Mmm bravo Melissami! But can you use something else then egg whites? My son has an allergic to eggs ... would just confiture or honey be fine? Merci!

it will be too sticky with jam or honey I think, try them with just orange flower water..bizzzz

I made your cookie but I had problems with measures , could you please give me the measures with "gram" instead of cups ? (specially for water and ghee).The other problem was ghee that I substitute it with melted butter, and I had problem with the consistency of filling! I didn't know how soft it should be! as I've never seen nor eaten these kind of sweets.I really love to bake them well and I'm looking forward to hearing from you soon. Thank you for your good site and nice recipes.

hi, I haven't got the exact measurements in gramms as most of the Algerian sweets recipes are made with cups,, 1 cup of flour is about 300g. the filing shouldn't be too soft or too hard. I am happy to send you a couple to taste..xxx

thank you friend . But I think 1 cup flour must be 125 to 150 grams with standard measuring cups. It is not obvious for me that you use for example 300gr flour and 100gr ghee , or 300gr flour and 200gr ghee!?

in algerian sweets,,it's most of the time the case..300g flour with 100g butter..xx

thanks a lot, sorry I havs been very busy lately and forgot to check my coms, you pronouce it machakla, it means a special design which we make using a special tweezers..xxxx

thank you for your great recipe , It turned delicious , but my problem is its name! what does it mean in English? How can I pronounce the name ? my friends asked me about meaning of its name , I searched on the net for hours and hours ,I thought that the name of this cookie means " hard , difficult" in English , Am I right ? please help me

I love Algerian sweets, I think they are among the best in the world. I have been looking for this recipe for a while, these cookies are crunchy on the outside but taste like baclava inside, am I correct? This cookie by itself got me hooked on Algerian sweets, which unfortunatley are extremley hard to find in the U.S., I have yet to find an Algerian sweet shop here. I will definitley be trying this recipe I just hope they come out looking as beautiful and neat as yours. Thanks so much for sharing your talent and recipe :-)
