Ingredients:
3 courgettes, sliced
2 egg yolks
150ml double cream
1 garlic clove
1 tbsp of dill
Salt and pepper
shortcrust Pastry
1 tbsp of sunflower oil
Method of preparation:
Roll out the dough and line a quiche pan, put it the fridge for about 20-30 minutes. When chilled prick the dough with a fork and cover with parchment paper and dry beans. Bake for 10-15min.
Heat oil in skillet and saute the courgettes for 2-3 min.
season
Mix egg yolks, cream, garlic and
dill. Season.
Fill the pastry case with the courgettes.
Pour the cream over the courgettes.
Bake in a preheated oven to 200C for 25-30min.
Cool slightly and serve.

Ingredients:
puff pastry
1 large aubergine or 2 small
1 clove garlic
1 tbsp of olive oil
juice of 1/2 lemon
chopped mint
1 egg
Salt and pepper
olives
Method of preparation:
Grill the aubergine, remove the skin, and puree
the flesh, mix with garlic, olive oil, lemon and chopped mint. Season.
On a floured surface, roll out the puff pastry.
Cut into squares.
Brush with beaten egg.
Prick the center of the squares with a fork.
Place a tbsp of the
mixture in the middle.
a half olive in the middle
Bake in a preheated oven at 200C for 20 min.

Roast Pepper Quiche with Mozzarella
We love quiches in my family, served with salad they make a very nice and light lunch. This quiche tastes truly delicious. Using different
colour peppers and adding pitted green olives to the pastry makes this quiche appealing to both the eye and the palate. The flavour of roasted peppers with mozzarella and basil gives it a

Ingredients:
Pastry:
175g plain flour
75g butter
pinch of salt
2tbs green pitted olives
3 tbsp cold water
Filling
1 red pepper
1 green pepper
1 yellow pepper
2 garlic cloves
2 tbsp olive oil
100g grated mozzarella cheese
2 eggs
150ml milk
1tbsp basil
Salt and pepper
Method:
Pastry:
Sift the flour and salt into a bowl. rub in the butter until the mixture resembles breadcrumbs.
Add the chopped olives and cold water. bringing the mixture together to forms a dough.
Roll the dough out on a floured surface. line a quiche tin. prick the base with a fork and leave to chill.
Filling:
Cut the peppers in half lengthways and place them on a baking tray.
Mix the garlic and oil and brush over the peppers.
Cook in a preheated oven 200C/GM6 for 20min.
Cut the peppers thinly.
Arrange the sliced peppers in the base of the pastry case, layering with the grated mozzarella cheese.
Beat the egg and milk together and add the basil. season and pour over the peppers.
Cook in the oven for 20min or until set.
Serve hot or cold.

Mini Aubergines Quiches
Ingredients
1 roll of puff pastry or shortcrust pastry
3 aubergines
2 tomatoes
1 onion
1 garlic clove
2 eggs
150ml thick double cream
basil
Grated Parmesan
Method:
In a pan, sauté onion, garlic, aubergines and tomatoes with 4 tbsp of oil. Cook for 20min
In a bowl, combine eggs and double cream.
Stir egg mixture into the aubergine mixture. Add basil. Season.
Line the mini quiches moulds with the pastry.
Spoon mixture into each mould.
Sprinkle with Parmesan.
Bake in a moderate oven for 30-35min

Chicken Rolls
Ingredients
Puff pastry
80g Mushrooms
200g minced chicken
2 tbsp breadcrumbs
4 tbsp tomato sauce
1 egg
2 tbsp parsley
To Garnish
1 egg, beaten
Sesame seeds
Black seeds
Method:
In a Pan, sauté mushrooms with 2 tbsp of butter, add the tomato sauce.
In a bowl, combine the minced chicken, breadcrumbs, egg yolk, parsley and then add the mushroom mixture. Season
On a floured surface, roll out the puff pastry in rectangle.
Place on the rectangle a roll of the chicken mixture.
Brush the edges of the dough with egg white.
Wrap the dough. Brush with beaten egg and sprinkle with sesame or black seeds.
Cut into small pieces of 5cm.
Bake in a preheated oven 180C for 20-25min

Chicken, Cheese and Leek Parcel
Ingredients:
1/2 roast chicken
3tbsp butter
2 large leeks
2 garlic gloves
1 cup button mushrooms
200g low fat cream cheese
Grated rind of 1 small lemon
3tbsp parsley
1 egg beaten
500g puff pastry
Salt and pepper to taste
Method:
Strip the meat from the chicken.
Melt the butter in a pan, add the leeks and garlic and cook for 10min.
Stir in the mushrooms and cook for 5 min.
Leave to cool.
Add the cream cheese, lemon rind, parsley and seasoning.
Stir in the chicken.
Roll out the pastry on a lightly floured surface.
Lift the pastry on to a baking sheet.
Spoon the filling on to the pastry.
Enclose the filling.
Seal the edges.
Glaze the top with beaten egg.
Bake in a preheated oven GM6/200C for 15min then lower the oven to GM5/190C and Bake for further 15 min.

Spinach Pie
Hi,
Today I share with you my lunch, Spinach and béchamel Pie. I cook this a lot as I found it’s the best way to get my kids to eat

Ingredients:
Shortcrust Pastry
500g Spinach
Béchamel Sauce
Salt and Pepper to taste
Grated cheese
Method
Cook the Spinach
Make the Béchamel sauce
Divide the dough in half.
Roll the first half on a lightly flour surface.
Line the dough in a greased pie tin.
Spread the mixture of spinach and béchamel filling on top of the dough
Add grated cheese.
Roll the rest of the dough.
Cover the filling with the second pie crust. While welding the edges of the pie.
Brush with a little beaten egg.
Bake in preheated oven for 45-50 min GM5
